The organic artichokes in extra virgin olive oil come from a local variety of Northern Tunisia called Òviollette harvested between mid-February to mid-May. The artichoke bottoms are preserved in extra virgin olive oil, which also produced by Moulins Mahjoub.
Artichokes are a key ingredients of the Mediterranean cuisine, both on its Northern and Southern shores. They are very easy to use in salads or anti-pasti but can also be cooked in a stew, tagine or roasted with fish or meat as well as in pasta or rice dishes. As with all of the Mahjoub products, they are produced using traditional farming methods with no additives or artificial processes.
