  • 1. Chop the onions and fry them in the olive oil until brown
  • 2. Add the peeled tomatoes, salt, pepper, bay leaf and oregano and cook at medium heat for 15 minutes. Remove the bay leaves when ready
  • 3. Roll out the puff pastry on baking paper and a large baking tray.
  • 4. Pre-heat the over at 170 degrees celsius
  • 5. Place the pastry in the oven for 10 minutes
  • 6. Cut the artichokes and sun-dried tomates into pieces of around 2-3cm. Chop the basil. Cut the chorizo and cooked ham into bands and mozzarella of around 3cm
  • 7. Take the pastry out of the oven, add the vegetables, chorizo, cooked ham. Add the mozzarella on top with the olives
  • 8. Place the tart back in the oven for another 10 minutes
  • 9. Remove from the oven and decorate with the basil
