The aix&terra anchovies dip is a Provençal recipe revisited by aix&terra, with anchovies from the Roque family in Collioure.
This unique cream uses anchovies from the Roque house (a family house in Collioure, founded in 1870, one of the last to perpetuate the ancestral and artisanal tradition of salting anchovies). For this Délice d'Anchoïade, aix&terra combined anchovy fillets with fennel, olive oil, a touch of organic mayonnaise and lemon juice. Ingredients: anchovies (37%), fennel, potatoes, olive oil, organic mayonnaise (sunflower oil, egg yolk, vinegar, water, mustard (water, mustard seeds, vinegar, salt, preservative: sodium bisulfite), sugar, salt, pepper, thickener: xanthan gum), capers, lemon juice, garlic, parsley. Keep in a cool place after opening.
