The Oro Bailen estate is located near Bailén in Jaén, Andalusia — the heartland of Spanish olive production — at the foothills of the Sierra Morena at 400 metres altitude, on the border between the Castilian Plateau and the Guadalquivir Valley. The estate comprises two farms — Los Juncales and La Casa del Agua — planted in the traditional 10x10 metre framework that promotes healthy canopy development and optimal fruit quality.

The business was transformed in 2002 when José Gálvez, the third generation of the Gálvez-González family, made a deliberate decision to abandon bulk production and focus exclusively on premium extra virgin olive oil. The result is a fully integrated production system — from farming to bottling on the estate — with a level of technical precision more commonly associated with fine wine than olive oil.
