The first question to ask to <h3> how do you intend to use your extra virgin olive oil <h3> If you are looking for an all-rounder for salads and dipping, a medium fruity would be ideal. For cooking and frying, an extra virgin olive oil from the middle of the harvest such as Casa del Agua or Le Ferre multivarietal would be best. If you are looking for a high polyphenol extra virgin olive oil, it is important to decide how you will be consuming it. If you wish to take 1-2 table spoons a day, very high polyphenols olive oil such as a coratina or a early harvest picual would be ideal but they will have a stronger flavour profile.
