The artichoke is one of the oldest vegetables grown in France. Green or purple, it gives its name to recipes typical of the south, such as artichonade or artichokes in the barigoule. In this unique recipe, artichoke hearts are cooked with herbs from Provence, as well as a blend of winter truffles Tuber Melanosporum (60%) and summer truffles (40%). The cream is mixed a bit to give it a creamy texture which is highly appreciated by chefs.
Located on the famous nationale 7, one of the most culinary destinations of the Provence, aix&terra was founded by Richard and Marina Alibert.
