The eggplant black truffle dip by aix&terra is an exceptional creation, which has been very popular with many of our customers. The artichoke is one of the oldest vegetables grown in France. Green or purple, it gives its name to recipes typical of the south, such as artichonade or artichokes in the barigoule. In this unique recipe, artichoke hearts are cooked with herbs from Provence, as well as a blend of winter truffles Tuber Melanosporum (60%) and summer truffles (40%). The cream is mixed a bit to give it a creamy texture which is highly appreciated by chefs.

Located on the famous nationale 7, one of the most culinary destinations of the Provence, aix&terra  was founded by Richard and Marina Alibert. From a passion for taste and natural produce, the couple swapped their Parisian life for a beautiful gastronomic adventure. Together with Julien Allano, a Michelin starred chef, they partnered up with small fruit and vegetable producers to develop original recipes.

Artichoke cream with truffle: artichokes (59%), onions, olive oil, broken truffles (Tuber melanosporum) (3%), (Tuber aestivum) (2%)), lemon juice, truffle flavouring, salt, garlic, mustard (mustard seeds, vinegar alcohol (sulphite), water, salt), pepper, thyme.
