This Italian olive oil is a single-variety extra virgin olive oil made exclusively from Coratina olives grown in Apulia, southern Italy. The oil is cold extracted and filtered, ensuring clarity, freshness and consistency while preserving its characteristic sensory profile.

Produced from 100% Italian Coratina olives, harvested at early to mid-ripening, this extra virgin olive oil reflects traditional Apulian olive growing combined with modern extraction techniques. Cold extraction below 27 °C helps maintain aromatic compounds and phenolic integrity. Filtration removes excess moisture and solids, improving stability and shelf life without compromising flavour.

Coratina olive oil is naturally rich in polyphenols, which contribute to its distinctive bitterness and peppery pungency. The new harvest 2025 displayed 736 mg/kg of polyphenols in November 2025, well above the threshold used to define high-polyphenol olive oil. These compounds are associated with antioxidant properties and play a central role in the oil’s structure, longevity and intensity.
