How It's Made

The base oil is cold-pressed in Castellaneta, Taranto, from mechanically harvested Puglian olives processed within 24 hours of picking, at temperatures below 27°C. A precisely measured natural jalapeño extract is introduced directly at bottling — infused into the oil rather than added as a flavouring on top — ensuring the heat and aroma integrate fully into every drop. No artificial additives, no GMO, no shortcuts.

At 98% extra virgin olive oil and 2% natural jalapeño, this is a condiment of real substance and restraint.
