Organic Giant Couscous — Hand-Rolled Mhamsa from Tunisia
This organic giant couscous, known traditionally as Mhamsa, is a hand-rolled, sun-dried couscous produced by Moulins Mahjoub in Tebourba, located in the northern region of Tunisia. Made using methods passed down through generations, Mhamsa is a cultural and culinary heritage food originally created by the Berbers of the Maghreb — a mountainous region stretching from the Atlas Mountains to the Mediterranean Sea, covering areas of present-day Tunisia, Algeria and Morocco.
Historically, the Berbers descended from the mountains into the valleys to gather wheat, preserving it against seasonal challenges such as drought. Over centuries, they perfected the technique of grinding and preserving wheat to ensure long-lasting nourishment. Today, Moulins Mahjoub continues to produce Mhamsa exactly as tradition intended, using manual craftsmanship and natural processes.
Traditional Artisanal Production
The production method is entirely hand-crafted: durum wheat semolina is rolled by hand with olive oil, water and salt using screens that separate the grains as they grow in size. Flour is added gradually, and rolling continues until the grains reach their characteristic large shape. Once formed, the couscous grains are coated in olive oil and salt — two ancient and natural preservatives used historically by Berber communities. Finally, the Mhamsa is sun-dried, concentrating flavour and developing its distinctive rich, full and nutty taste.
Culinary Uses & Cooking Method
This giant couscous is easier and quicker to prepare than pasta. Simply pour the Mhamsa into boiling water, cover, bring to a boil, then remove from heat and allow it to rest for 7–10 minutes. Finish with extra virgin olive oil and salt, or combine with Mediterranean sauces for a wholesome dish. Serve with roasted vegetables, chicken, lamb, grilled fish or as part of a mezze spread.
