Moulins Mahjoub Organic Testour Sauce with Artichokes and Lemons

This organic tomato sauce (340g) takes its name from Testour, a historic town in the Medjerda Valley of northern Tunisia, and is made with the ingredients the area is known for: sun-ripened tomatoes, artichokes and pickled lemons. It is produced by Moulins Mahjoub, the family estate in Tebourba that has farmed organically for three decades, using traditional methods with no additives, preservatives or artificial processing.

Flavour

Ripe tomato forms a rich base, lifted by the gentle tang of pickled lemon and the soft, earthy sweetness of artichoke. A touch of harissa and traditional Tunisian spices adds warmth rather than heat, and organic extra virgin olive oil rounds everything out. The result is bright, savoury and distinctly Tunisian.

How to use it

In Tunisia this sauce is served with couscous, and it works just as well stirred through pasta. Try it:

• spooned over couscous with roasted vegetables or chickpeas
• tossed through penne or spaghetti, finished with a drizzle of olive oil
• as a base for baked fish, such as cod or sea bass
• with eggs, shakshuka-style, for a quick brunch

Storage

This sauce contains no preservatives. Once opened, store the jar upright in the fridge and cover the surface with a little olive oil after each use.
