Due Vittorie Oro balsamic vinegar of Modena IGP is an exceptional expression of authentic Modenese craftsmanship, produced in the heart of Modena and Reggio Emilia, the historic birthplace of aceto balsamico di Modena. Created by one of Italy’s most respected balsamic makers, this rich and velvety vinegar is made from slowly cooked grape must and matured through traditional ageing processes that develop natural sweetness, depth and aromatic character.
Traditional Production & Maturation
This premium balsamic vinegar begins with selected grapes whose must is gently cooked and gradually concentrated. The vinegar is then matured using the traditional battery system: a succession of wooden barrels made from different woods such as oak, chestnut, cherry and mulberry. Over time, the vinegar is transferred into progressively smaller casks, each imparting unique aromas and flavour nuances. This patient, artisanal method produces a dense, dark balsamic with exceptional balance and harmony — the signature style expected from true Modena balsamic producers.
Tasting Notes
Due Vittorie Oro IGP balsamic is dark, glossy and aromatic, offering notes of fig, plum and raisin, intertwined with gentle acidity and a long, honeyed finish. Silky on the palate, it drapes beautifully over sweet and savoury dishes, enhancing ingredients rather than overpowering them.
