Due Vittorie Oro Balsamic Vinegar of Modena IGP is produced in the heart of Modena and Reggio Emilia, the historic birthplace of aceto balsamico di Modena. Made by respected balsamic producers, this vinegar is crafted from cooked grape must and matured using traditional methods to develop depth and natural sweetness.

About the production

The must is gradually concentrated and then matured in a series of wooden barrels. Over time the liquid is transferred into successively smaller barrels of different woods, a hallmark technique of aceto balsamico tradizionale. Each barrel contributes subtle aromatic notes, resulting in a refined, balanced profile typical of true balsamic and other traditional balsamic vinegars.

Tasting notes

Dark, glossy and vibrantly aromatic with concentrated fig and plum notes, gentle rounded acidity and a lingering, honeyed finish. Silky on the palate, it complements both savoury and sweet dishes.

How to use it?

  • Drizzle over Parmigiano Reggiano or burrata
  • Finish grilled vegetables, risotto or roasted meats
  • Pour it generously over your rocket salad
  • Pair with fresh strawberries, figs or dark chocolate
  • Try it with raspberries and vanilla ice cream

How this differs from white balsamic?

Unlike white balsamic, which is lighter and fruitier, this dark IGP vinegar offers concentrated must-driven sweetness and a denser texture — the expressive character expected from authentic aceto balsamico di Modena.
