The Novo is the very fist olive oil produced by our new partner Nobleza del Sur in Jaen, Andalusia in a their farm called Vista Allegre. It is cold extracted within 4 hours from picual olives harvested in October 2023. The dark green oil has an ultra low acidity of just 0.1% This superb olive il has a complex aromatic profile which will take to the olive grove, with hints of lavender, fruity notes of tomatoes, green apple and green almonds. It is a well-balanced olive juice with a fruity start and a slightly spicy and bitter finish. It takes around 10-14 kg of olives to produce 1 litre of this olive oil.
Nobleza del Sur has been recognised as one of the world's best olive oil producers and has received a score of 99 points in the 2024 of the prestigious international olive oil guide Flos Olei by Marco Oreggia and Laura Martinelli.
