The Ventresca, or belly cut, is the most prized part of the tuna—renowned for its extraordinary tenderness, buttery texture, and rich, delicate flavour. Only the finest fish are selected, gently cooked, and prepared entirely by hand, following artisanal methods refined over five generations.
