The Serrats White Tuna (Albacore) or "Thunnus Alalunga" is line-caught, one by one, in the Gulf of Biscay and in the best moment of the season (June to October) respecting the traditional fishing tackle. Because its aroma, its refined taste, its smooth white meat and its properties, White Tuna (Albacore) loins are regarded as some of the best canned fish. Once, the best fishes have been selected, they are cooked and subsequently prepared and canned in organic extra virgin olive oil. 

In the production process for the white tuna (albacore) in organic virgin olive oil, only loins are selected, prepared and packaged by hand before adding organic extra virgin olive oil. This olive oil is of the highest quality in every sense. It has an excellent flavour and aroma, and is made in a manner that respects the standards for organic farming. The white tuna is certified by the MSC (Marine Stewardship Council) an international, non-profit organisation which fights overfishing and promotes sustainable fishing practices around the world.
