This unique recipe combines the delicate sweetness of Calissons d’Aix – the iconic confection from Aix-en-Provence – with the sun-ripened apricots of the Drôme and a touch of almonds.

Calissons are a traditional delicacy of the South of France, crafted from a fine paste of candied melon and almonds, delicately topped with royal icing. When blended with juicy apricots, they transform a classic preserve into a refined creation with new layers of flavour and aroma.

Lovingly prepared in the traditional way, this jam is slow-cooked in a copper cauldron to preserve the natural fragrance of the fruit and almonds. The result is an artisan spread that brings together Provençal tradition and gourmet innovation.

How to enjoy it:
