Moulins Mahjoub Organic Harissa — Authentic North African Harissa Paste

This hand-crafted North African chilli condiment has been an essential part of Tunisian and Maghrebi cuisine for centuries. Made by Moulins Mahjoub, a family-run certified organic farm in the Mejerda Valley in northern Tunisia — one of the oldest certified organic estates in the Mediterranean — this harissa is produced using the same slow, traditional techniques passed down through generations.

Unlike industrial harissa pastes, this version is created in small batches using only sun-ripened organic peppers grown on the estate, blended with estate-produced extra virgin olive oil, garlic and aromatic spices. No preservatives, colourings or artificial processes are ever used. The result is a more concentrated, complex harissa than anything you will find in a supermarket — with a deep heat that builds gradually, balanced by the natural sweetness of properly ripened peppers and the earthy warmth of caraway and coriander.

Taste and heat level

Intense, aromatic and powerful — this harissa is significantly more concentrated than most commercial alternatives, so a small amount transforms a dish. The heat builds gradually and lingers rather than hitting immediately. To soften the intensity, blend with extra virgin olive oil or warm water for a looser texture, or stir into yoghurt or crème fraîche for a spicy dip or sandwich spread.

How to use harissa

As a cooking base: Stir a teaspoon into pasta sauces, soups, lentil dishes and stews for depth and warmth. A spoonful added to a tomato sauce transforms it completely.

As a marinade: Rub onto chicken, lamb, fish or vegetables before roasting or grilling. Mix with olive oil and lemon juice for a quick, flavourful marinade.

With couscous and grains: The traditional Tunisian way — stir a small amount into the cooking liquid or serve alongside as a condiment. Also excellent with rice, quinoa and bulgur wheat.

As a condiment: Spread onto sandwiches and wraps, stir into mayonnaise or yoghurt for a spicy dip, or dollop onto hummus, eggs or roasted potatoes.

With eggs: A small spoonful alongside scrambled eggs or fried eggs on toast is one of the quickest and most satisfying uses of a good harissa.

Why Moulins Mahjoub harissa is different

The Mahjoub family has farmed the Mejerda Valley since the early 20th century and has been certified organic since 1994 — one of the earliest organic certifications in Tunisia.
