What is gluten free pasta?

Gluten free pasta refers to pasta made without wheat or other gluten-containing grains such as barley or rye. The range of gluten-free alternatives has grown significantly in recent years, offering a wide variety of flavours, textures, and shapes suitable for different dietary needs and culinary styles. Many gluten-free options also provide additional nutritional benefits, often containing higher levels of fibre and protein compared to traditional wheat-based pasta.

After tasting a large selection of gluten-free pasta, we found that they generally fall into two main flavour categories. The first includes pasta made from rice and corn flour, which are naturally gluten-free and typically closest in taste and texture to classic wheat pasta, although they often require a longer cooking time. The second category includes pasta made from legumes, such as red lentils or green peas, offering a more distinctive flavour that reflects their primary ingredients.

Both types can be paired with different recipes. For traditional dishes with rich sauces, rice- and corn-based pasta works particularly well due to its neutral taste. For lighter, vegetable-forward meals where natural flavours shine, legume-based pasta may be the ideal choice.

Delicious gluten free pasta recipes

The second category have a more pronounced taste which reflects its main ingredients, such as red lentils or green peas. Both types of gluten free pasta can be enjoyed with corresponding recipes. For more classical dishes, with strongly flavoured sauces, rice and corn gluten free pasta are probably a good choice since they are more neutral in taste. If you prefer a pasta dishes with many vegetables and you are looking for the vegetable taste, the second category may be more appropriate.
