The pickled flower buds of the caper bush, which grows wild in the mountainous regions near Tebourba in northern Tunisia are hand-harvested. They are the un-opened flower buds (caper buds) of a native Mediterranean caper plant,Capparis spinosa. They are smaller than caper berries and have a more subtle taste. Moulins Mahjoub preserve them in sea salt, thereby following a traditional Berber conservation method, free of any additives or preservatives.
